This extra virgin olive oil is made from olives typical of this area of Sicily, Biancolilla and Nocellara del Belìce, grown without the use of pesticides. Obtained by cold pressing, it is balanced, fairly fluid, light green in color immediately after pressing and straw yellow after a couple of months of decanting. The acidity is quite low. The flavor is fresh and fruity, slightly spicy with distant notes of artichoke and green tomato. Use raw and for cooking.
